I want to use the layout builder to create a custom layout for the blog archive and the single post page
same for the portfolio

Both Elementor and WP bakery builders have the Blog widget allowing to create custom blog (archive) page.
You need to enable a single post in the builder settings and create any template in the single post.

You can configure the blog page a git in the Theme Settings > Blog.
It is not possible to make a custom template.
