01. Variable products in WooCommerce let you offer a set of variations on a product, with control over prices, sale prices, stock, image and more for each variation. Edit any available data. The only required field is Regular Price and you can enter the sale price of each variation: https://ibb.co/gVSV92w.

02. Sorry but there is no such option in Theme Settings. But you can try this third-party plugin to achieve that: “Simple Custom Post Order”.
