You sent screenshots from old WooCommerce images size settings. In the latest version, they reworked their images system. Now, you can control it via Appearance -> Customize -> WooCommerce -> Product images. And they also remove the height option at all. It is calculated automatically based on your original image proportion. Or you can enable “Cropping” option there and specify your own proportion manually.
