How can I add an HTML Block before products grid on shop page? I’m using organic template.

You can add the content to the top of the shop page: https://xtemos.com/docs-topic/how-to-add-filters-are-in-custom-shop-page/ You need to enable the top filters in the Theme Settings > Product Archive > Shop filter.
If you want to add anything else use the custom layout feature of our theme:
