how to show sub categories in CATEGORIES menu

hi , i add sub categories on post and only show categories item in sidebar , also i check in Widgets , no have any opttions to actvie to show blog side categories , sub categories .
and also for portfolio , i add side bar , but in Widgets , no have any Widgets to use as portfolio categories and show in side bar

For the blog categories you need to add the categories widget:

For the project categories try to create a menu and add the project categories items in the menu, Then navigate to appearance > menu > add the navigation menu widget and select the menu.

we already sent sub categories , and in widget side no have anu menu to active it .

This widget shows only the categories not the sub categories. If your intention is to exclusively display subcategories in the sidebar, I recommend creating a menu and adding the subcategories as menu items. Subsequently, utilize the navigation menu widget in the main widget area and select the desired menu.
