Mannually order products in shop

Hello, we have a large online store and are constantly adding products. We want to sort these so that the most appealing range as possible shows when you click on the general shop page.
We have tried the sorting option in products behind the scenes, but this order is then not showing on the site.
How do we rearrange the order of products on the shop page?

You can change the sorting in Appearance > Customize > Woocommerce > Product catalog.
