How to exclude some categories with Show single variation option ?

how to enable this Option: Show single variation, but need exclude some categories like Waistcoat which have different sizes available but same product photo, i want to exclude thats type of categories.

Sorry to say it is not possible to disable it for a specific category. But you can hide the variation from them.
Go to Products > All products > edit product, scroll down to the “Product Data” section, and click on the “Variations” tab.
Find the variations you want to hide. Edit each of these variations by clicking on the dropdown arrow next to them.
In the variation settings, look for the “show variation product” and uncheck it.

When you visit the shop page, the variation will be hidden.

It is working, When I uncheck the “Show variation product”, But it took lots of time and efforts to hide, How can I do bulk edits?

Currently, there is no built-in option to apply this setting in bulk. You will need to manually uncheck the “Show variation product” option for each variation individually.
