Parent Categories Only

I have the following queries:

1. On the category pages I just want to show the parent category not the sub categories in the page title, how to achieve this?

2. I want customer to type custom text to be printed on the products say for example on the shirt how to achieve this?

3. I want to show product in different colors to be clicked by the user instead of just plain solid colors (image thumbnails in different colors)
