    Hello,
    We need to add:
    1. Global site tag (gtag.js) – Google Analytics
    2. Google remarketing
    These 2 codes between <head></head>. Can we add them in Theme settings – Global Custom JS?

    Do you have any documentation on adding Google conversion snippet in woocommerce thank you page?

    You can use the following plugin to insert any code to head or to the footer https://wordpress.org/plugins/insert-headers-and-footers/

    So i understand that i can not add these 2 scripts in Global Custom JS
    1. Global site tag (gtag.js) – Google Analytics
    2. Google remarketing
    Correct?

    You can add any scripts to that area and they will be printed in the head inside the <script> tag.
