I have watched the video and do not understand what is unfriendly: attribute dropdown or necessity to chose two attributes in the variable product.
The dropdown can be replaced with the text inline list – navigate to Dashboard -> Products -> Attributes -> Attribute -> Configure items, enable swatch as shown http://prntscr.com/jskm29
The second issue – the necessity to chose two attributes in the variable product -can not be changed, you should exclude the attribute from the variation as a way-out
