Hello,
1. The account drop-down menu is edited (you can clean the field and appropriate menu item would disappear) in Woocommerce > Settings > Advanced.
2. The search element in the Header builder has the option to show the list of categories existing on the site. This list cannot be edited. Select Categories will show all the categories, existing on the site.
You can create categories in Product > Categories
