Might be some third party plugins conflict with the default WooCommerce functionality you can try disabling the third party plugins. Normally the “Default sort order” option is under the edit page of attribute. From the Products >> Attributes.

In case if you did not find the sorting option in attributes even the plugins not required by the theme are disabled. Then switch your theme to some default theme like twenty nineteen so it will be clear that it’s the theme issue of not.

I have seen your attachments. Your numeric attributes are looking fine. What do you expect that how should those numeric attributes would shown?
