how can i change the order of the categories displayed in my page title to the manual order given in Products>Categories?

This is what i already did before however the categories are not displayed in that order – only on the sidebar…

You need to go to Appearance > Customize > Woocommerce > Product catalog and change shop page view, you can set showing products.
