can I choose products (both – “best sellers”, “recommended” and “sale”) to appear in component “Best sellers”? now it assigned automatically

Yes, you can choose specific option but you can not choose multiple options for data source of products. You can choose only one option at a time.

In case if you want to display a specific group of products then you can create a new product category and use that category for those specific products then choose that specific category from “Categories or tags” option.
