1) You need to select the menu that is set as the mobile menu and edit it according to your needs.
2) The categories menu works the same for mobile and desktop. If you want to set different categories menu for mobile then you need to create a new menu and add it as the categories menu from mobile menu in the header builder.
The my-account, wishlist, compare tabs are not editable. If you want to remove the items from the mobile menu you need to add the following Custom CSS in the Custom CSS for Mobile area under Theme Settings >> Custom CSS.

where the data of these tabs are collected, so as administrator I can see, what users were looking for or wish for, or there email address to send them follow up discounts and so forth

Unfortunately, there is no option in theme settings that saves information about WishList and compare.
My account is WooCommerce functionality and our theme doesn’t influence it. You can get the list of the customers who registered to your website from Dashboard >> Users.
