Category Page Header: Choose categories to display

Is there a way to display only sub-categories under category page title, or chosen categories in general ?

First of all thanks for choosing our Theme, we are glad to be you in the WoodMart WordPress family :-).
I saw the screenshot you attached. Please try enabling the option current category ancestors from Theme Settings >> Shop >> Sidebar & Page Title.

Is there a way, other than “display:none”, to hide sub-categories on certain pages (too many to display under title) ?

You can try the option to exclude categories from the shop page title from Theme Settings >> Shop >> Sidebar & Page title.
