You have not attached the screen, but I try to guess.
If you want to remove the categories from the search form, enter the Sert form in the Header builder and you will find the option to show/not to show them. The same for Browse categories, you can remove them in the Header builder.
The categories in the shop page sidebar are removed in Appearance > Widget > Shop page area. Categories in the shop page title is disabled in the Theme Settings > Shop page > Sidebar and titles.
