Is there a way to display some product categories with a Grid View and others with the List View?
Also is there a way to customize the List View (padding, fields displayed, etc.)
Actually, there is no option to show the categories in the list view. However, there is a trick: you can use Infobox element to show your categories in the list view like this: https://prnt.sc/10rn7am
The disadvantage of this way is the necessity to insert all the information manually, new categories should be created and filled out manually as well.

I think maybe you misunderstood the question. I do see that in the Theme Settings You can choose between List View and Grid View. But that effects every product/shop page on the site. Is there a way to assign this setting per product so that on the Shop Page some Product Views would be Grid Style and other would be List Style? And in the List View are you able to assign what fields will be displayed?

But then we still need to use the Grid layout for other products.
Unfortunately, it is not possible to set the mixed layout. I understood you, however, wanted to suggest a way, hoping it would be workable for you. Sorry, it is not.
