I searched for hours and i can`t find the possibility where to edit these texts.

I saw the screenshots you attached.
1) To change the text of the Browse Categories, My account, Search for Products, Select Category. You need to install and use the loco translate plugin.

2) To edit the content of the Top Bar please Go to Woodmart >> Header Builder >> Edit Header >> Edit Top Bar.

I did like you said, but nothing changed. I did exactly the same steps like in the video, but I don`t see a change of the english text to german.
Why it is not working?

You have created the wrong language file, you are using the simple German language for the site that is why it is not working.
