How can I fill in the area under the product images with text.

Unfortunately, it is not possible, HTML structure does not allow to inserting of any content there. This is the main image area, you can upload bigger images and set the gallery at the bottom to fill this space.

Can you then put the thumbnails to the left of the main image under the main image? So instead of links below the picture?
What is the size of the product image when displayed on the page. I don’t mean the size of the original photo. This is adjusted depending on the size, but in which size it is adjusted.

There is not a requirement for image size. You can check which sizes are used in dom here: https://xtemos.com/docs-topic/image-size-and-content-alignment-in-a-product-grid/
You can find all the options for the container size that keeps the image in the Theme Settings > Single Product > Images.
