So when a category has no products it shows a text. That is fine, but is there a way to edit this layout, or perhaps add some random products on it so it doesn’t look empty?
Yep, you can add any product to the category via the settings of the product (Dashboard -> Products) or more precisely in the “Product categories” area set this product for the appropriate category.

Only in case, if that category page is related to “Layouts”, so with the help of the “Products (grid or carousel)” element you can show any random products.
