Hello,
In Appearence -> Customize -> WooCommerce -> Product Images I’ve set my images to 800×800 (single) and 250 (thumbnails) but on category pages (https://www.onlinegarden.it/categoria/piante-da-esterno) and related products thumbnails (see https://www.onlinegarden.it/prodotto/piante-da-esterno/arbusti/cotoneaster-horizontalis-cotognastro/ as product page example) the thumbnails are rendered in 800×800.

The PageSpeed Insights tells me that I have to use better image dimensions to save on the total page size and I agree with this statement. How can I make the theme use the 250×250 version of the thumbnails on category pages and related products?

Please try to increase the image size for the thumbnails. Please check this manual to see which ones to try: https://xtemos.com/docs-topic/image-size-and-content-alignment-in-a-product-grid/
