Hello Luke, I want to setup a custom layout for all the children categories.
That means I would exclude all parent categories there and apply the layout for all product archives.
I have tried disabling other plugins and going to the main theme of Woodmart, did not fix the issue, seems to be tied with the huge amount of attributes and terms there are on the website.
You can disable and enable stuff in the staging website, same issue there, credentials attached.

This was a notice and not an error so not the real issue, however, there was an invalid taxonomy which was the real issue behind this, thanks for the heads up.
