Hello,
Unfortunately, the Product Categories you are referring to are added to the sidebar of the Shop and Category pages through the Product Categories widget, which can be found under Dashboard > Appearance > Widgets > Shop Page Widget Area.
However, this default widget does not provide an option to show or hide the other categories if you choose one parent category.
As an alternative, you can enable the category display in the Page Title section by navigating to:
Theme Settings > Product Archive > Page Title and enabling the Categories in Page Title option.
Additionally, enable the Show Current Category Ancestors option.
For example, if you visit the Men category, only its subcategories (e.g., T-shirts, Coats, Shoes) will be displayed in the page title.
