but also keep my shop images cropped to 1:1 square like you have done here:

Thank you very much for choosing our theme and for contacting our support.
Please navigate to Appearance > Customize > WooCommerce > Product Image. You will see the option to configure thumbnails and product image on the single product page. The configuration set for thumbnails will be in force to categories images as well.
