Unfortunately, Woocommerce does not have the option you describe. You can change the default sorting of products in the shop /category page in Appearance > Customize > Woocommerce > Product catalog, you can set showing categories and products or just categories.

If you need other option you will have to find a plugin, we have not met any nor tested that is why we can hardly recommend it.
