Regarding showing Attribute Swatch on Products under the Archive & Category pages, you can go to Dashboard > Theme Settings > Shop > Variable Products Attribute swatches > Grid swatch attribute to display > there you can select the Attribute that you want to show: https://i.snipboard.io/iVzCbf.jpg

But you can only show one Attribute Swatch only.

To show the Quantity Input on Products under the Archive & Category pages, you can go to Theme Settings > Product archive > Products styles > Elements > there you can enable the Quantity input on product option: https://snipboard.io/jHWLJw.jpg

Further, by default for Variable Products it works on Select Options button which lets you select the Variant first > and then choose the values and then add Product to Cart: https://snipboard.io/bm1xXe.jpg
