because with burger icon / mobile menu you can not change the sort order and their names.
The menu for categories are defined by your theme/code.
You just select “mobile menu” in header builder and the element “mobile menu” automaticly include booth menus.

I see no option in this “mobile menu” element to change the sort order
You only can select the menu for normal menu and the categories are predefined.
