Random question instead of this picking up products is there a way this can pick up product categories instead?

have tried this with tabs but its better as ajax on mobile

1- Sorry to say but the AJAX Product Tabs element is specifically related to the Products and you can only Products in it. Although, you can select Category in it from which you want to show Products of.
Further, for the Categories there is dedicated Product Categories element that you can use if you want: https://snipboard.io/8dxoD7.jpg
2- Regarding your replicating concern, kindly please share your Site WP-ADMIN Login details in the Private Content field so that we can check these concerns on your Site and help you out accordingly.

You can try using the Product categories element on the respective page like we have shown here: https://snipboard.io/mLMH7Z.jpg
This provides you the option to have the Categories with their names and when you click on them it will redirect you to the respective Category page.
As far as the Products are concerned, for them to not show the Add to Cart button you can enable the Catalog mode on your Site under the Theme Settings > Shop > Catalog mode > Enable catalog mode: https://snipboard.io/BnVmvP.jpg
