Backup Theme

after I personalize the themes, how can I back it up the themes only

Before you customize the theme, please export the Theme settings in the Theme Settings > Export. I would suggest making the full backup of your site.

sorry, please tell me how to restore it back as well.
By doing this, if I need a new site, can I just install a plain wp, install your themes and then restore the back up, then I will have a actually look website as the original website?

You can delete and install the theme again or you can install the base version of the theme.
