Cant create new category button with all options

I must be missing really a point here and that makes me mad.
You have demo categories and in menus I see many options for this cattegory button – dropdown settings, sizes, html block, background and so on.

When I add new produc category from the options on the left, the new buttons doesnt have all these settings. What is going on. Why is it so complicated?
