Is it possible to change “I’ve read and accept the terms & conditions * text in checkout to something else in your theme?

i can’t found it in Appearance >> customize >> woocommerce >> Checkout

The text you are trying to edit is related to WooCommerce plugins and you should be able to edit it by creating a new translation for the WooCommerce plugin.
