Unfortunately, it is not possible. You can have either swatches or drop-down on both product grid and product page.

You need to enter each attribute item and disable swatches. Actually, follow this instruction vice versa: https://xtemos.com/docs/woodmart/variable-products-swatches/
If you need further help, please let me know. Insert your site credentials into the Private content under the message box, and advise which attribute you want to revert back. I will show the steps with screens.

InzmanParticipantI don’t have Enable Swatch ticked on any of Color attributes.

Which attribute you have wanted to change, please provide the product page URL. I have checked the Size, it is drop-down.

Then enter each attribute item https://gyazo.com/c18d8b4303f3b2b57e5b5cafdbbd38d4 and remove colors, images and disable swatch if you have enabled in any: https://gyazo.com/5e0ab1506400746f4bff1a7f4c552220
As soon as you press “Configure items” you will see which attributes should be edited, the drop-down appears after all the attribute items would be “clean”

InzmanParticipantTested in DEV site. Yes, if all colour attributes in use for a certain product have the colour value emptied in admin, it shows the default select dropdown.
It is confusing though, “Enable swatch” option clearly marks that when this is unchecked, the colour attribute shouldn’t make any difference.
Imagine: I want to use the default dropdown for all colours. I would have to clear the color code value for all of them and when I change my mind, I would have to fill in all the color codes again. Instead of just ticking a checkbox.
I consider it as a bug and would suggest this behaviour be changed.September 21, 2021 at 12:38 pm #320060

“Enable swatch” enables the variations as a text. And as soon as you add color and image variations get either as color or image, depending on the settings.
