categories and subcategories …

Thank you for using our theme and contacting us.

There are two types of menu in our theme presented on your screenshot. First one is a main navigation that you can create manually in Appearance -> Menus and the second is a categories menu that generated automatically from all products categories and displayed only on the shop page. They are absolutely different and you can’t copy any effects or functionality from one to another.

the main navigation, has as only edit the navigation menu, background color and text? or just the header completely at once?

In our Theme Settings you are able to change your header entirely, there are no any separate options for the main navigation, sorry.
