Yes, that is possible. You need to enter Appearance > Customize > Woocommerce > Product catalog and select the view in the Category display drop-down.

If you click the category, the category page would show sub-categories. This is the way Woocommerce works. WoodMart does not influence that.

You can create a custom page, use the Product Category widget and specify which categories to show by ID.

This list of categories is not editable, this list shows all the categories existing on the site.
