To display attribute swatches as dropdowns on the product grids you need to do follow the following steps.
Go to Products >> Attributes >> Edit Attribute >> And disable the following option.

I have followed the steps you sent but it still does not work.
For information, I updated our theme this morning because we have a notification of the new update. Before when I created parameters, they are all well placed in the drop-down list but since this morning after this update, it no longer works.

You need to disable the option for all the attribute items of the attribute.

Before it worked well but after the update not work. All attributes created before the update work fine in a dropdown list, but those created after do not. I created a test attribute following your recommendation and unchecking the box below “Enable swatch” but it still doesn’t work.
