You can display categories in a sidebar and tag cloud and choosing the category/tag, appropriate products will be shown.

Search is conducted by a keyword or a SKU

You can put the categories and tags in the shop page sidebar: http://prntscr.com/m02dm3

1. Navigate to the Theme Settings > Shop > Sidebars and Page title> configure the sidebar http://prntscr.com/m02e8s

2. Navigate to Appearance > Widgets and add Product Categories and Tags http://prntscr.com/m02ev6 to the Shop page widget area http://prntscr.com/m02f6b
