Please, disable all plugins that are not related to our theme and provide us with your admin access. We will log in and check what is wrong there. You can leave only the following plugins that are required for our theme:
WoodMart core
WooCommerce
Elementor/WPBakery page builder

You can fix it by applying patch # 492679. To do this, go to Dashboard -> WoodMart -> Patcher, find the corresponding patch and click on the “Apply” button. Let us know if it works for you.

I applied this patch just now in a client and in the gtmetrix test it became a mess, a lot of css appeared, even though they are minified in WP Rocket.

This patch doesn’t change anything related to CSS at all. Could you please send us at least one CSS file that appeared after the patch had been applied?

Is it possible to rollback the patch?

Because all the CSS here shouldn’t be there.

It was the only site that includes this patch.

Or could it be something with Woo 8.0.3? (last version)

You can download theme’s original files and reinstall it via Appearance -> Themes -> Add new. It will roll back all changes made in the theme files.

I did a rollback of the WPRocket version, and it seems to be ok on this site.

But I saw that the official version 7.3 came out, I’m going to install it to test the performance, because in the last 7.2.4 the performance worsened in all sites.
