How can I let Tab [3] only show in certain product categories and be hidden in others?
(Theme settings – product – Tabs – Additional tabs – Tab [3])

You can create the preset with the condition where defined the desired categories on which it will be shown, and in the settings of the preset enable that third additional tab.

Thanks for the links, but it does not tell me how to only hide TAB 3 in certain product categories…

Create the preset with the condition related to categories: https://take.ms/KSS88 , then edit this created preset navigate to Single product -> Tabs and clear the fields related to the custom tab which you want to hide: https://take.ms/Hs8Uut
