Hello,
As you know the Products are handled by WooCommerce. So, regarding the Products default sorting WooCommerce provide a single option which can be accessible under the Dashboard > Appearance > Customize > WooCommerce > Product Catalog > there you can find the option of Default product order > from there you can select the option that best suits you from the dropdown: https://snipboard.io/NJahzG.jpg
Right now, there isn’t any Random sorting option available from WooCommerce end.
