I want to replace the search bar at the top of the website, changing the default search to use Elasticsearch or OpenSearch.

WooCommerce and WordPress search are handled by core functions, so modifying theme files is not recommended. Use a dedicated search plugin for this: https://wordpress.org/plugins/elasticpress/
