Hello,
To translate the text you need to install and use the loco translate plugin and choose the correct path to translate the string.
Your path will be Loco Translate >> Themes >> WoodMart.

The Categories in the select category dropdown are set to display at alphabetical you could not change the order from theme settings.
You can use the free plugin to change the order with simple drag and drop.
