How to edit mobile menu category tab?

Hello,

first of all: you make a great support job here! I needed to say that.

I played around with the menus to fit it to the shop but unfortunately I did something wrong I think. In the mobile hamburger menu: there are two tabs: Menu and Categories. Currently in both tabs is the same menu.

Where can I edit the categories menu to show in this tab?

You can specify a different menu for your mobile menu (categories) in Theme Settings ->
Header -> Menu.
