How to remove product variables below the product thumb on category page.

You need to disable this option: Grid swatch attribute to display https://prnt.sc/1194jvv in the Theme Settings > Shop > Attribute swatches. Make sure nothing is set.

Please deactivate all the plugins not related to the theme and switch the parent theme, check the issue, If the problem has gone, activate the plugins one by one, checking the issue to detect which one causes the problem.
