The product grid/carousel height inherits from the shop page layout of the products. You can adjust the image sizes in the

product grid carousel module from Edit Module >> Design Tab.

I saw the screenshot you attached. You cannot make the title of the product grid/carousel element clickable. There is no option in theme settings available for this.

To hide the categories and brands from the products you need to Go to Theme Settings >> Shop >> Product Styles.
