How to set the sidebar to show in the custom area

If I create one new side bar, can I set it to show in all posts belong to one category?

You can show a custom asidebar for a specific post, navigate to “Posts” > “Edit” for the post you want to modify. Scroll down to the post settings, and there you’ll find an option to select a custom sidebar.
