I saw the screenshot you attached.
1) The tabs are controlled by a woocommerce plugin and our theme doesn’t influence them.
You can read the woocommerce documentation in the following link:
https://docs.woocommerce.com/document/editing-product-data-tabs/
2) You can change the text using the loco translate plugin and your path will be Loco Translate >> Plugins >> Woocommerce.
