I want to remove some Categories

The search shows all the existing categories and this list is not editable. You can hide the categories in the search and add the Product categories menu created in Appearance > Menu by means of the Category element in the Header builder as it is implemented here: https://woodmart.xtemos.com/home/ Browse Categories is the Header builder.
