1. I’m trying to change the sizes of the thumbnails in the gallery but I can not find this function. I want these to be a size longer than wide.
2. On the other hand the simple products untwist me the quick view, in the simple products the sharing is superimposed, the categories and the sku appear at the top of the description and not below as in the demo.

Navigate to Appearance > Customize > WooCommerce > set this options http://prntscr.com/ixoqf3As for the second issue will you clarify the problem, do you want to switch off the quick view? Did you add SKU and Category in Descriptions field? If yes, remove it into product information: http://prntscr.com/ixovvo Category is added automatically

but the second part that I am referring to is the following:
in the Demo to see the products the sku and the category are under the button to add to the cart, but in my installation I see that this is in the top part of the description I would like to know why and how it is solved.
On the other hand, in the quick view, when they are simple products, the area of sharing is raised in front of the button of the cart, the sku and the categories also go up to the description of the product.
3, I also have a problem with the variables of the products, because when they are images they are not saved and they are also deformed at the point of selection.

It seems that you have customized our product page elements or have some plugin installed that breaks the layout. Try to disable them one by one to see which of theme cause these problems.

Sizes are attribute values. First of all, you create an attribute, then fill with sizes, then you add this attribute to a product and create product variation. You will find detailed instructions here: https://docs.woocommerce.com/document/variable-product/
