This is the attribute table> Go to Theme Setting > Single Product > Elements > Show attributes table after short description. Go to Products > All Products > Edit Product > in the product data section you can see the attributes. Here you can add more attributes.

It shows only when the swatch is out of stock. If it is not working on your site then share the wp logins details of your site i will check and give you a possible solution.

Your issue has been resolved. Check back your site after completely clearing the browser cache.

Sorry for the early confusion, The Disabled Swatch style is for the variants of the Products which are disabled not for the Out of Stock variants. So, you need to have the variant of the Product not checked with the Enable option on it and then the Disabled Swatch style will work accordingly. See these images for reference:
